INGREDIENTS


1L (4 cups) chilled guava nectar
250ml (1 cup) white rum
1/2 ripe pineapple, peeled, hard core removed, finely chopped
2 cups fresh passionfruit pulp
1/2 cup fresh mint leaves
300ml chilled ginger ale
300ml chilled mineral water
1 lime, thinly sliced
DIRECTION


Combine the guava nectar, rum, pineapple and passionfruit in a large jug or bowl. Cover and place in the fridge to chill.

Place the mint in a mortar and pound with a pestle until coarsely crushed. Add the mint, ginger ale, mineral water and lime to the guava mixture and stir to combine. Divide among serving glasses to serve.
NOTE:

Cook's tip: You'll need 7 Panama passionfruit, which are larger than regular passionfruit, for this recipe.

Make it ahead: Prepare this recipe to the end of step 1 up to 4 hours ahead. Continue from step 2 just before serving.
