INGREDIENTS


16 dried dessert figs, halved
1/4 cup (60ml) Pedro Ximenez sherry or other sweet sherry
2 x 140g packets pikelet bites (see note)
250g mascarpone cheese
100g sliced jamon (see note) or prosciutto, cut into strips
Olive oil, to drizzle
Chervil (see note) or flat-leaf parsley sprigs, to garnish
DIRECTION


Soak the dried dessert figs in the sherry for 2 hours or until they have absorbed all the liquid.

Place the pikelets on a platter and spread each with a little mascarpone. Add a small scroll of jamon and a piece of fig. Sprinkle with sea salt and freshly ground black pepper, drizzle over oil and garnish with chervil or parsley.
NOTE:

Pikelet bites are from supermarkets. Jamon is Spanish cured ham from supermarkets and delis. Chervil is from selected greengrocers.

Pedro Ximenez is a rich, sticky sweet sherry - it's not cheap, but if you keep a bottle on hand you can use it to add a special touch to desserts as well as this elegant canape.
