INGREDIENTS


* 1 rectangular removable base tart tin
* 2 teaspoons gelatine powder
* 75 ml hot water
* Crumb base:-
* 1 cup macadamias
* 12 pieces Arnotts plain biscuits
* 125 gms butter melted
* For filling:-
* 125 gms butter
* cup sugar
* 250 cream cheese
* 1 tablespoon vanilla paste
* 1 tablespoon lemon myrtle
DIRECTION


1. Crumb base:

2. Line a rectangular removable base tart tin with baking paper on the base and sides.

3. In a food processor, grind biscuits and macadamia nuts until finely ground as possible.

4. Transfer crumbs into a medium sized bowl and add melted butter.

5. Stir to combine.

6. Press onto the base of the lined tin and refrigerate until needed.

7. To prepare gelatine:

8. Dissolve gelatine in hot water and cool completely.

9. For filling:

10. Using an electric mixer, cream butter and sugar until fluffy.

11. Add cream cheese, vanilla paste and lemon myrtle.

12. Beat again to combine.

13. Add gelatine and beat until fluffy and fully incorporated.

14. To assemble:

15. Take tin out of fridge.

16. Using a spatula, spoon the filling on top of the crumbs and smooth surface as much as possible.

17. Refrigerate for several hours until set.
