INGREDIENTS


2 corn on the cobs
1 tbsp vegetable oil
1 red chili. de-seeded & sliced
1 shallot
2 stalks lemon grass. bruised
3 spring onions or baby leeks
1 red pepper. de-seeded & sliced
400ml can coconut milk (normal or light)
1 pint vegetable stock
325g thread egg noodles
juice of 1 lime
small bunch coriander. chopped
DIRECTION


1) Hold the corn upright on a board, and using a sharp knife, slice downwards to strip the kernels from the cob.

2) Heat the oil in a large pan, add kernels, leeks or spring onions, chilli, shallot, lemongrass and red pepper, and cook for 3-4 minutes, stirring occasionally.

3) Add coconut milk, stock. Bring to the boil, then cover. Reduce heat & simmer gently for 15mins.

4) Discard lemongrass & add noodles cook for 4 minutes until tender.

5) Remove from the heat and stir in the lime juice and
coriander.

6) Serve immediately.
NOTE:

For less calories in the recipe use the light coconut milk.

To make a soup instead of a heavier course - up the vegatable stock to 1.5 pints, use only 1 x corn on the cob and put in only 175g of noodles.
