INGREDIENTS


7 sheets ready rolled shortcrust pastry
800g lean beef mince
1 1/2 red onion, chopped
2 red capsicums, deseeded, chopped
425g Mexe-beans
35g taco seasoning mix
400g diced tomatoes
4 tomatoes, chopped
1/2 cup chopped fresh coriander
Sour cream and tomato salsa, to top
DIRECTION


Preheat oven to 200C. Cut 14 x 15cm circles from shortcrust pastry. Press each circle into a 1 cup (250ml) Texan muffin pan. Line the base with non-stick baking paper and fill with rice. Bake for 15 minutes. Remove paper and rice. Bake for 10 minutes or until golden.

Meanwhile, brown mince in a frying pan on high. Transfer to a bowl. Soften 1 of the onions and capsicums over a medium-high heat. Return the mince and add beans, taco seasoning mix, diced tomatoes and simmer for 10 minutes.

Combine tomatoes, remaining onion and coriander. Spoon the mince into cases and top with a dollop of sour cream and tomato salsa.
