INGREDIENTS

4 Bakers Delight Continental Hungarian Parmesan Rolls
120g mesclun salad greens
12 slices rare roast beef (see note)

Onion marmalade:

2 tablespoons olive oil
4 large brown onions, peeled, thinly sliced
2 tablespoons brown sugar
2 tablespoons malt vinegar
DIRECTION

Make onion marmalade: Heat oil in a saucepan over medium-low heat. Add onions. Cook, stirring, for 25 minutes or until soft and golden. Add sugar and vinegar. Reduce heat to low. Cook for 10 minutes or until caramelised. Set aside to cool. Spoon into a 2-cup sterilised jar.

Cut rolls down centre and open out. Divide salad greens and roast beef between rolls. Top with 1 tablespoon onion marmalade. Serve.
NOTE:

Rare roast beef is available from the deli section of your supermarket.

Onion marmalade makes 2 cups. Keep refrigerated for up to 2 weeks.
