INGREDIENTS


400g dried fettuccine pasta
1 tbs olive oil
1 garlic clove, crushed
1/2 cup finely sliced green shallots
185mls (3/4 cup) sour light cream
160mls (2/3 cup) chicken stock
300g smoked mackerel with cracked black pepper (Springs brand), skin and small bones removed, roughly flaked
1 Lebanese cucumber, finely diced
2 tsp fresh lime juice
DIRECTION


Cook the fettuccine in a large saucepan of salted boiling water, following packet directions, until al dente.

Meanwhile, heat the olive oil in a large frying pan over medium- low heat. Add the garlic and cook for 30 seconds. Add the green shallots and cook, stirring, for 1 minute. Reduce heat to low and add the sour light cream and stock and stir until combined. Gently simmer, uncovered, stirring occasionally, for 6 minutes without boiling. (See microwave tip.) Stir in the smoked mackerel.

Drain the pasta and add the fish sauce with the cucumber and lime juice and mix gently to combine. Serve immediately.
NOTE:

Microwave tip: Place oil, garlic and green shallots in large heat-resistant microwave-safe bowl. Cook for 2 minutes on HigtV850watts/100%. Stir in sour cream and stock and cook for 3-4 minutes on Medium/500watts/50%.

Gourmet tip: Add 1 tbs finely chopped fresh dill with the cucumber.

For the kids: Smoked fish & cheese pasta - peel the cucumber. Stir 60g (1/2 cup) grated cheddar cheese through pasta with the cucumber.
