INGREDIENTS


2 (350g) chicken breast fillets, trimmed
1 celery stalk, trimmed, finely chopped
1/3 cup pecan nuts, toasted, finely chopped
1/3 cup whole-egg mayonnaise
8 slices white bread
1/2 small baby butter lettuce, leaves separated
4 slices wholemeal bread
DIRECTION


Place chicken in a saucepan. Cover with cold water. Bring to the boil over medium heat. Reduce heat to low. Simmer for 5 minutes or until chicken is cooked through. Remove from pan. Cool. Finely chop. Combine chicken, celery, pecans and mayonnaise in a bowl.

Place 4 slices white bread on a flat surface. Spread with half the chicken mixture. Top with half the lettuce. Top lettuce with wholemeal bread slices. Spread wholemeal bread with remaining chicken mixture. Top with remaining lettuce and remaining white bread slices.

Using a serrated knife, remove crusts. Cut each sandwich into 3 fingers. Secure with toothpicks. Serve.
