INGREDIENTS


1 lemon, sliced
2 sprigs flat-leaf parsley
400g small chicken breast fillets, trimmed
1/3 cup pistachio kernels, finely chopped
1 stick celery, finely chopped
1/2 cup whole-egg mayonnaise
1 loaf Turkish bread, split lengthways
olive oil cooking spray
butter, softened, for spreading
DIRECTION


Bring a deep frying pan of water to the boil over medium-high heat. Add lemon, parsley and chicken. Reduce heat to medium-low. Simmer, partially covered, for 8 to 10 minutes or until chicken is just cooked through. Transfer chicken to a plate. Allow to cool slightly. Cover and refrigerate until cold.

Finely chop chicken and place in a bowl. Add pistachios, celery, mayonnaise and salt and pepper. Stir until well combined.

Preheat a grill on high heat. Spray both sides of bread with oil. Grill each side for 1 to 2 minutes or until lightly toasted. Spread cut sides with butter.

Spread bread base with chicken mixture. Top with remaining bread. Trim sides. Cut loaf into 4cm squares and serve.
NOTE:

Time plan: Up to 1 day before - Make the filling to the end of step 2. Store in an airtight container in the fridge. 1 hour before guests arrive - Toast the Turkish bread. Make the sandwiches.
