INGREDIENTS


600g pork leg steaks, trimmed, thinly sliced
1/3 cup char siu sauce
2 tablespoons peanut oil
1 cup shredded Chinese cabbage (wombok)
Steamed jasmine rice, to serve

Apple salsa:
1 medium granny smith apple, cored, cut into matchsticks
1/4 cup fresh coriander leaves
1 tablespoon lemon juice
DIRECTION


Make apple salsa: Place apple, coriander and lemon juice in a bowl. Toss to combine.

Place pork and char siu sauce in a bowl. Toss to coat (see note). Heat wok over high heat. Add half the oil. Swirl to coat. Add half the pork. Stir-fry for 2 to 3 minutes or until almost cooked. Transfer to a plate. Repeat with remaining oil and pork.

Return pork to wok. Add cabbage. Stir-fry for 1 to 2 minutes or until heated through. Serve with rice and apple salsa.
NOTE:

Refrigerate pork in char siu sauce for 30 minutes for flavours to develop, if time permits. Super saver: Replace pork leg steaks with trimmed chicken thigh fillets and save around $4.12 in total.
