INGREDIENTS


* 80g goats cheese
* 1 tbsp low-fat milk
* 4 skinless chicken breast fillets
* 1 clove garlic, finely chopped
* 1/4 tsp dried chilli flakes
* 2 tbsp flat-leaf parsley, chopped
* olive oil
* 1/2 cup white wine
* 1/3 cup chicken stock
DIRECTION


In a bowl, mash 80g goats cheese and 1 tbsp low-fat milk until smooth. Add 1 clove garlic (finely chopped), tsp dried chilli flakes and 2 tbsp flat-leaf parsley (chopped). Season and stir well.

Cut a deep pocket in 4 skinless chicken breast fillets, fill with cheese mixture and secure with a toothpick.

Heat 2 tbsp olive oil in a large frying pan over medium heat and cook chicken breasts for about 5 minutes each side or until cooked. Remove and keep warm.

Add 1/2 cup white wine to pan and cook over high heat, stirring, until reduced by half.

Add 1/3 cup chicken stock and season. Cook for 1-2 minutes or until slightly thickened.
