INGREDIENTS


1 cup espresso coffee, cooled
1/3 cup caster sugar
2 tablespoons Kahlua liqueur (optional)
DIRECTION


Combine coffee, sugar and Kahlua (if using) in a jug. Pour into a 6cm-deep, 9cm x 19cm (base) loaf pan. Cover. Freeze for 30 minutes. Using a fork, flake mixture to break up ice crystals starting to form.

Cover. Freeze for 3 hours, flaking mixture every 30 minutes, or until completely frozen. Spoon into martini glasses. Serve.
