INGREDIENTS


1 ripe large mango
1 small fresh green chilli, finely chopped
1 tbs finely chopped red onion
1 tsp aromatic bitters (Angostura brand)
24 scallops in their half shell
1 lemon, juiced
Salt & freshly ground black pepper
DIRECTION


Preheat grill on medium. Line 2 baking trays with non-stick baking paper.

Cut the cheeks from the mango close to the seed and peel away the skin. Remove the remaining flesh from the seed. Finely dice all the flesh and place in a small bowl. Add the chilli, onion and bitters, and mix to combine.

Use a teaspoon to remove the scallops from the shells and then wipe the shells clean with paper towel. Return the scallops to the shells. Place on the lined trays and drizzle with the lemon juice. Cook the scallops under preheated grill for 3-5 minutes or until they are just cooked through and opaque.

Spoon the bitters & mango salsa over the scallops in their shells and season with salt and pepper. Serve immediately.
