INGREDIENTS


360g Woolworths chicken filo with mushroom filling
2 tomatoes, finely chopped
2 tbs diced red onion
1 tsp fresh lemon juice
2 tbs small fresh basil leaves
Salt & freshly ground pepper
Mixed salad leaves, to serve
DIRECTION


Preheat oven to 180C. Place the filo parcels on a non-stick baking tray. Cook for 25-30 minutes or until golden.

Meanwhile, place the tomatoes, red onion, lemon juice, basil, salt and pepper in bowl. Toss gently until well combined.

Divide the chicken filo and salad leaves between serving plates. Top with the salsa and serve with extra salsa on the side.
NOTE:

Tomato and dill salsa: Replace the basil with 1 tablespoon of chopped dill and add 2 teaspoons of toasted pine nuts. Serve with the spinach & feta chicken filo parcel.

Cucumber and chilli salsa: Replace tomatoes with 1 Lebanese cucumber. Replace lemon juice with lime juice and basil with coriander. Add half a small red chilli, deseeded and finely chopped. Serve with the cheese & mango chicken filo parcel.
