INGREDIENTS


* 1/2 cup golden syrup
* 100g butter, chopped
* 1/2 cup brown sugar
* 825g can pear slices in natural juice, drained, reserving 1/2 cup juice
* 2 eggs, beaten
* 1 teaspoon vanilla essence
* 1 1/2 cups self-raising flour
* 1 teaspoon ground ginger
* vanilla ice-cream, to serve

Sauce
* 100g butter, chopped
* 1/4 cup brown sugar
* 125g glace ginger, finely chopped

DIRECTION


1. Make sauce Melt butter and sugar in a 6.5cm deep, 28cm (base) non-stick frying pan over low heat for 3 to 4 minutes or until foaming. Remove from heat. Sprinkle with glace ginger. Set aside.

2. Heat golden syrup, butter and sugar in a small saucepan over medium heat for 3 minutes or until butter melts and sugar dissolves. Transfer to a bowl. Stir in reserved pear juice, eggs and vanilla. Sift flour and ground ginger over mixture. Stir gently to combine.

3. Arrange pears over ginger sauce. Pour pudding batter over pears. Cover with a tight-fitting lid or double layer of foil.

4. Cook over medium-low heat for 25 to 30 minutes or until top of pudding has set. Remove from heat. Allow to stand for 5 minutes before inverting onto a platter. Serve warm with ice-cream.
